Beckie's winter wellness risotto has all the stuff you love (parmesan cheese and just a smidge of white wine) but is also packed full of green veggies including peas spinach and silverbeet.
Topped with lemon zest mint, chilli and a dollop of almond pesto.

Remove sleeve and pierce film. Heat in microwave for 3 to 4 minutes.
Preheat oven to 160°C. Pierce film. Heat in oven for 10 to 12 minutes stirring half way through.
