Free range chicken thighs are roasted with walnuts and middle eastern spices and laid on a carpet of cranberry, apricot and almond jewelled rice before being lovingly scattered with fresh mint.

Preheat oven to 180°C/160°C fan-forced. Pierce plastic film in several places.

Place container in oven and bake until piping hot, 28-30 mins.
