Chickpeas should hang out with pumpkins more often. This dish is an aromatic and lightly spiced red curry, with crispy curry leaves and chunky homemade mango chutney. Name a more iconic trio.

Basmati Rice (45%), Chickpeas (25%), Pumpkin (12.5%), Carrots (12.5%), Onions (5%), Coconut Cream, Mango, Red Curry Paste, Coriander, Coconut Flakes, Ginger, Sunflower oil

Preheat oven to 180°C/160°C fan-forced. Pierce plastic film in several places.

Place container in oven and bake until piping hot, 28-30 mins.

Let stand for 1 min and serve. Enjoy!
