An homage to the famous Brazilian ‘feijoada’ this dish is carnival in a pot. Black beans are cooked gently in a stew containing annatto seed, cocoa powder, capsicum and garlic and topped with basmati rice and a top layer of green peas, sweetcorn, tomatoes and capsicum.
